Not necessarily. Your late giant collision doesn't have to be as violent as that. Presumably there is a range from low-energy collisions like the slow one that is suggested as "pancaking" Farside onto the Moon to massive and high-velocity ones that smash the whole planet into gravitationally-unbound rubble and vapour. To some extent you get to dial it in.

Angle of Incident and Relative Velocity between the objects will be the deciding factor (given that you have already decided on the masses of the objects). Since Energy is proportional to velocity squared, a small change the relative velocity can make a big difference in how the impact affects the two objects.

Yeah, and the mass is also significant because gravitational energy also makes a contribution. Compact massive bodies can't collide slowly because the minimum speed of collision is the escape velocity.
